“Like all Álvaro Domeqc wines, the Palo Cortado Sherry is selected from the first pressing. This wine undergoes a first phase of biological aging to continue with a second phase of oxidative aging. The first phase of biological aging is shorter than in the case of an amontillado, without exhausting it.

Tasting notes: Bright mahogany colour. Nose of great aromatic intensity, it presents sharp notes and dried fruits such as hazelnuts and a smooth palate. On the palate it is slightly dry and very balanced with great persistence on the palate.”
